Portuguese cod fish salad

I'm back with another recipe! Its been a while! This is a quick salad I put together over Christmas with some preserved cod we got back in Lisbon in 2019 (finally managed to make use of it!).  You don't have to use preserved fish for this, you can also use any cooked flaky white fish. This salad is filling, well balanced and is great for lunch or even for dinner with some bread or soup. 



Ingredients
200g cooked flaky white fish or preserved cod 
Handful cherry tomatoes, quartered 
~10 black olives, halved 
3-4 hard boiled eggs, quartered
Few sprigs fresh parsley, chopped 
2 medium potatoes, or 1 large potato, peeled and cut into small chunks

For the dressing
Extra virgin olive oil, balsamic vinegar 
Salt & pepper to taste

Method

  • Take a large saucepan with boiling water, cook the potatoes until soft. Drain, set aside and let cool slightly (you don't want the potatoes to be hot for this salad - cold-lukewarm is ideal!)

  • In a large salad bowl, add the cod, tomatoes, hard boiled eggs, olives and cooked potatoes. Mix gently and then drizzle over a little olive oil and balsamic vinegar to taste. Also mix in some salt and pepper! 

  • Sprinkle over a little parsley and serve with crusty bread!
