Masala omelette

I'm not the biggest fan of omelettes, so I was a bit hesitant to try this Indian masala omelette. It was only after Yogesh convinced me that it would be tasty and nothing like the Western style omelettes - often containing cheese and ham which I don't like the taste of so much - that I decided to give it a go. After trying the masala omelette, I will happily admit that I really liked it! This recipe will serve 2.


What is an Indian masala omelette?


A masala omelette is beaten eggs which are mixed with spices and fresh chillies for a spicy kick. Often fresh coriander is added as well. They are served with rotis/chapatis, but you can also put them in-between two bits of toast or bread. It is also nice to have some ketchup alongside or any other spicy dipping sauce you prefer. This makes a nice change to your usual breakfast and doesn't take much time at all to put together. 


Ingredients
3 eggs 
1 small red or white onion, finely chopped 
1 small tomato, finely chopped or a few cherry tomatoes, chopped
1 green chilli, finely chopped (add more if you prefer your masala omelette to be spicer)
Handful fresh coriander, chopped 
Salt to taste
Vegetable oil (or butter)

You'll need these spices
1/2 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
1/4 tsp coriander powder 

Method

  • Take a large mixing bowl, and crack in and beat the eggs. Mix in the onion, tomatoes, fresh chilli, fresh coriander and spices. Add salt to taste. Mix to ensure it is well combined. 

  • Take a large non-stick frying pan and heat a little vegetable oil or butter. Carefully pour in the masala omelette mixture and give it a quick swirl so it sets on the bottom of the pan. Cook for 1-2 minutes on medium heat until the base is cooked and the sides crisp. Flip and repeat on the other side. 

  • Once cooked, remove from the pan. Cut up into triangles and serve with bread, rotis or chapatis. 

Recipe notes
You can either choose to make one large omelette from this mixture in a large frying pan, or make 2-3 small masala omelettes if your frying pan is smaller in size. I just tend to make one large one and then cut it up into portions accordingly.
