Simple roasted asparagus
Spring time calls for some spring vegetables! This is just the way I like to have asparagus, roasted in the oven with olive oil, salt and pepper. It is such a fresh tasting vegetable that looks too pretty to be mushed into soups or pasta! When you roast asparagus in the oven they retain all of their delicious flavour and they are perfectly tender. Serve this roasted asparagus alongside some fish fillets or toss into a light salad of your choice.
Ingredients
Bunch asparagus (around 8-10)
Sea salt
Cracked black pepper
Olive oil
Method
- Preheat your oven to 180°C. Chop of the woody end of the asparagus and discard. An easy way to find where the woody is to bend the asparagus. Where the asparagus naturally breaks, that is where the woody end starts.
- Take a baking sheet or oven proof dish. Place in the asapargus on the baking sheet and drizze with olive oil. Season with salt and pepper to taste. Ensure that each asparagus is coated well.
- Place on the top shelf of your oven and roast for 8-10 minutes until nicely browned.
- Remove from the oven and serve warm with salad, fish or just enjoy as is with a sprinkling of Parmesan cheese & lemon juice!
