Kadai paneer masala
I'm going to be making some kadai paneer this weekend, so I thought I would prep in advance and already made the kadai paneer masala. Kadai paneer is a common North Indian dish and gets a unique flavour from the masala which you use in it. Recipe coming soon for the kadai paneer itself!
You'll need these spices
2 tbsp coriander seeds
2 dried red chillies
1 tbsp fennel seeds
2-3 cloves
Method
- Dry roast the spices in a frying pan on medium heat until fragrant.
- Tip out onto a plate and let cool completely
- Once cool, grind the spices to a fine powder in a spice or coffee grinder, or bash to a fine powder using a pestle and mortar.
- Store in an airtight container.
If you want to make your masala a bit spicier, add another dried chilli or add some peppercorns! As I'm not totally familiar with all the masalas just yet and still need to learn to experiment with them, I took inspiration for this masala from Cook with Manali - one of my favourite food bloggers!
