Rustic wholewheat cookies
Something a little different - baking! As you may have noticed, I'm not so much of a baker - I have generally always preferred cooking. But a couple of weeks ago I was in the mood to make some cookies. I made this with wholewheat flour to make them a little healthier. I can't quite remember how many cookies I made from this batch, just divide them up depending on how big you want them to be!
Ingredients
150g unsalted butter
150g soft brown sugar
1 egg, whisked
1 tsp vanilla essence or extract
225g wholewheat flour
150g white chocolate chips
1/2 tsp salt
1 tsp bicarbonate of soda
Method
- Heat the oven to 180°C or 350°F. Grease and line a few baking trays with baking paper.
- Melt the sugar and butter in a non-stick frying pan until dissolved. Remove from the heat and let cool for a few minutes and add the vanilla essence.
- Add the flour, salt and bicarbonate of soda to a bowl. Mix well and add the whisked egg.
- Mix in the melted sugar and butter and mix well to form a cookie dough.
- Lastly, fold in the white chocolate chips.
- Take medium sized spoonfuls of cookie dough mixture and place on the baking tray around 4cm apart. They will melt and flatten into cookies during the baking process.
- Bake for around 12 minutes and then transfer to a wire rack to cool. Depending on how many baking trays you have, repeat steps 6 and 7 with any remaining mixture.
