Chicken tagine | step by step photo recipe
Quick step-by-step recipe for a chicken tagine! Very easy, just brown chicken, onions, chilli and garlic. Then add the remaining ingredients and put in the oven preheated to 180 degrees for as long as you like! A tagine is a special kind of earthenware cone dish from Northern Africa which is really good at keeping moisture in. As steam rises, it condenses on the cone lid and then moisture drips down again - no flavour is lost in the cooking process!
- Brown 2 chicken breasts (cut into bite size pieces). Fry onion, chilli and garlic.
- Add handful chopped cherry tomatoes
- Add a 400g can of chickpeas.
- Add a few sliced dried apricots, prunes and 1 stem ginger, diced.
- Add 250ml of tomato passata and 1 tsp of harissa paste
- Add a handful coriander.
- Top up with 450-500ml chicken stock to cover. Season with salt and pepper.
- Put in the oven at 180 degrees for at least 1hr (but the longer the better!)
