Warming masala chai

Whenever I feel like I need a little pick me up, I make a masala chai. This drink is super comforting and easy to make. It is a absolute staple in India, and is drunk every single day. I find it's always more rewarding make it yourself with all the spices rather than buy the chai tea from the supermarkets. This recipe serves two mugs. Easy to make vegan by using almond or soy milk, I wouldn't recommend coconut milk as the taste will change!



Ingredients
4-6 cardamon pods
1/2 tsp ground ginger
1/2 tsp fennel seeds
Small piece of cinnamon
2-3 cloves
2-3 peppercorns
1 star anise 

Method: 

  • Put all spices in a pan with 500 ml water and bring to the boil. Add 1-2 tsp black tea and simmer for approximately 10 minutes.


  • Add 200 milk and 1 tbsp sugar. Simmer for 5 mins.


  • Strain and serve in mugs or glasses.


  • Tip: add a little condensed milk in at the end for a lovely creamy sweetness
