Cucumber raita

Raita is a common Indian accompaniment to rice dishes such as pulao or biryani! Really cooling if you are eating something spicy. A plain raita would only contain yoghurt mixed with a little salt, but there are also variations like boondi raita (yoghurt with spiced chickpea puffs), beetroot raita, and this recipe here, yoghurt with finely diced cucumber. The great thing about raita is that you can really customize them and adjust them according to your tastes. I like to add a little chilli powder and salt, but you can leave these out. It is entirely up to you. You can also add chaat masala or cumin powder. The variations are endless. 



Ingredients
1/2 cup cucumber, finely diced 
2 cups natural yoghurt 
1 tomato, finely diced 
Handful mint or coriander, chopped 
Pinch salt 
Pinch chilli powder 

Method
  • Mix all the ingredients together in a bowl until combined. It's that simple! 

  • Thin out the raita with milk if the yoghurt is very thick. 

  • Enjoy the raita alongside pulao or biryani along with an onion salad.
