Mango lassi

At the moment its mango season in India! The season runs from April - May and these are also the hottest months in India. Perfect excuse for a mango lassi recipe! 

What is a lassi?
Lassi refers to any yoghurt based drink and they are a great antidote to a spicy curry. They can be flavoured in many different ways, some are salty, some are flavoured with fruits, and some are just made plain with a hint of sugar and cardamom. My favourite type of lassi is of course a mango lassi!

As the mangoes you get over here are not great (they take a long time to ripe and don't have the same taste as the Indian mangoes), I usually opt to make a mango lassi with tinned mango pulp. This is already sweetened and has a delicious flavour. This recipe makes two glasses.



Ingredients
Flesh of 1 large mango or 150 ml mango pulp 
250ml natural yoghurt
1  tsp ground cardamon
To garnish: chopped pistachios and saffron strands


Method
  • Blend the yoghurt, mango and cardamon until smooth and frothy. 


  • Add a little milk if too thick. It should be a nice pouring consistency, like a smoothie.


  • Sprinkle over the pistachios & saffron strands and enjoy!
