Easy chocolate puffed rice squares
These puffed rice squares are a (relatievely!) healthy snack which you can rustle up. They keep for a couple of weeks in the fridge. I had quite a bit of puffed rice after making mumura chivda and jhal muri. I wanted to make a healthy snack with the remaining puffed rice and this was the result! These kind of sweets/snacks are usually loaded full of sugar but this just uses maple syrup to give it a sweetness. Peanut butter and some dark chocolate add a delicious flavour - almost like a snicker bar!

Ingredients
125g (5 cups) puffed rice
150g peanut, almond or cashew butter
120 ml coconut oil (melted)
150g honey or maple syrup

Handful pistachios roughly chopped

- Lightly grease and line a large baking dish with baking paper. Set aside.
- In a large bowl, add the puffed rice. Set aside.
- In a saucepan on low heat, melt together the coconut oil, honey and the nut butter you are using.
- When nicely melted together and smooth, pour over the puffed rice. Mix well to ensure that each puffed rice piece is coated with some of the syrup.
- Add the coated puffed rice to the baking tray and press down to ensure it is compact and that it fills the tray you have. Depending on the size you may end up with a thinner layer of puffed rice.
- Next, melt the chocolate over bain marie (also known as a double boiler).
- Pour & spread the chocolate evenly over the puffed rice. Finally, sprinkle over the chopped pistachios
- Place in the fridge for a few hours to firm up before cutting into squares. Keeps for a few weeks in an airtight container in the fridge!
