Boondi raita

Boondi raita is a easy & delicious accompaniment to pulao, biryani or a spicy dish. It is made from yoghurt, milk, boondi & a few spices. Boondi are fried puffs made from a gram flour/chickpea flour batter. Boondi raita is very easy to make - you simply need to mix everything in a bowl and serve. You can soak the boondi beforehand but I prefer to add the boondi in the yoghurt straightaway. This means that the boondi stays a little crunchy which gives a different texture with your meal! Do check out some of my other accompaniments on the blog as well! 



 

Ingredients 
2 cups / 500ml full fat yoghurt 
1 cup / 250g plain boondi 
50-75ml milk to thin out the raita to your preferences. You can also use water if you prefer a lighter boondi.
1/2 tsp salt
 

You'll need these spices 
1/2 tsp chilli powder 
1/2 tsp cumin powder 
1/2 tsp chaat masala optional

Method 

  1. Take a bowl and whisk together the milk and yoghurt until creamy and well mixed. You can use water instead of milk if you prefer a lighter boondi

  2. Ass the salt and spices and stir into the yoghurt. 

  3. Next, add the boondi and mix well. 

  4. Sprinkle over some more chilli powder and garnish with mint if you like. 

If you prefer to soak your boondi beforehand, just do this in around 1/2 cup / 125 ml warm water for 5-10 minutes.
