Guacamole recipe
This classic Mexican dip is something I make often. I haven't shared many quick and easy recipes like this yet on my blog, and I think this needs to change! Guacamole is delicious to have with flatbreads or vegetable crudets. The basic ingredients for guacamole are mashed ripe avocodos, seasoning and olive oil. Depending on what you have in your fridge you can also add ingredients like tomatoes, onion and coriander.
Personally, I prefer to have some of these extra ingredients in my guacamole for that extra zing, but you customize this recipe according to your tastes. I also like my guacamole to be smooth - so I tend to use my food processor. It makes the whole process of making guacamole super quick and efficient. But you can mash the avocado with a fork if you prefer it chunky.
Guacamole is best eaten fresh on the day you make it so my suggestion would be to only make what you need. Cut or mashed avocados have a tendency to go brown in the fridge from oxidizing. If you have made to much, simply sprinkle a little lemon juice over the top and place in an airtight container. This should stop it from going brown!
Serves 2
Half small red onion, finely diced
1 medium tomato, finely chopped
2 tbsp olive oil
Small handful coriander leaves, chopped
Salt & pepper to taste
- Add the avocado flesh, lemon juice & olive oil to your food processor. Blend until smooth.
- Next, add the onion, tomato & coriander. Pulse a few times to mix.
- Transfer to a dish and then add salt and pepper to taste. Enjoy guacamole with vegetable crudets or with some tasty flatbreads!
