Elaichi chai

Elaichi chai, also known as cardamom chai, has to be favourite kind of chai. Although I also love masala chai which has many more spices, this is my go-to chai for in the evening when I need a few quiet moments to myself. 

I like to simmer the cardamom pods and seeds in the water for at least 10 minutes before adding the tea, sugar & milk. This really allows the cardamon flavour to shine in this chai. I also prefer to use a lighter black tea so as to not overwhelm cardamom flavour. But you can use a stronger black tea if you prefer!


Ingredients
8-10 cardamom pods, crushed and seeds removed
2 cups / 500ml water
1/2 tbsp loose leaf black tea
1-2 tbsp sugar (or to taste)
1 cup milk / 250ml milk


Method

  1. Add the water and cardamom pods & seeds to a saucepan. Let the water come to the boil and then simmer for 10 minutes.

  2. Next, add the black tea and simmer for 2 minutes until infused.

  3. Add the milk and simmer for 1 more minute. 

  4. Add the sugar to taste and mix.

  5. Strain the cardamom chai into mugs or glasses and serve!

  6. Serve the elaichi chai!
