Cabbage ki sabzi

Cabbage ki sabzi is an incredibly easy veggie side dish to make and to have alongside some rice, chapatis or dal!  I often make side dishes like this as they require minimal ingredients and you can almost customise it with any vegetable you like. For example, brinjal sabzikarela sabzi & bhindi masala are all dishes which you can rustle up in less than 30 minutes. These dishes are also very healthy and helps you reach your five a day! I didn't add any ginger or garlic to this cabbage sabzi so it did not overpower the flavour of the cabbage. However, if you like to add it, by all means do!



Ingredients 
Serves 2-3
1/2 medium sized white cabbage, cut into thin strips 
1 tomato, finely chopped 
1 small red onion, finely diced 
Vegetable oil, as required 
Salt to taste
Water, as required
Chopped coriander leaves, to garnish

You'll need these spices 
1 tsp mustard seeds 
1 tsp cumin seeds 
1/2 tsp kashmiri red chilli powder 
1/2 tsp turmeric 
1/2 tsp coriander 
Pinch garam masala 


Method 
Cook time - 30 minutes 
  • In a kadai or large deep frying pan on medium heat, add a good glug of vegetable oil. When the oil is hot, add the cumin and mustard seeds. 

  • When they start to pop & sizzle, add the onion. Saute until translucent. 

  • Next, add the tomato, and saute until the tomato is completely soft. 

  • Next, add the kashmiri chilli powder, turmeric & coriander. Saute for a few more minutes.

  • Add the chopped cabbage, and around 1/4 cup of water. Turn the heat to low, cover and then simmer until the cabbage is soft. This took around 15 minutes. 

  • When the cabbage is soft, sprinkle over a pinch garam masala and add salt to taste. Mix well. 

  • Finally, sprinkle over the chopped coriander and serve! I like to have this cabbage sabzi with rotis & dal tadka
