Shrikhand | creamy sweetened yoghurt
Shrikhand is a simple and delicious dessert made from fresh sweetened yoghurt and flavourings like rose, cardamom and saffron. Why have a plain yoghurt when you can enjoy this instead?! This dessert is popular in Gujurat and Maharashtra. Traditionally this dessert is made with fresh hung yoghurt, but I made this with Greek yoghurt. This yoghurt already has the required thick consistency and makes this dessert an absolute breeze to make. Making with hung yoghurt requires straining the yoghurt overnight, so you would have to plan in advance.
This shrikhand is

Ingredients
500ml greek yoghurt
2.5 - 3 tbsp natural cane sugar, or to taste
Pinch saffron strands
500ml greek yoghurt

2-3 tsp milk
1/2 tsp cardamom powder
Few drops rosewater
Few pistachios, chopped

Method
- Soak the saffron strands in the milk in a small dish or bowl. The milk will turn yellow and the saffron strands will release their lovely aroma.
- In a another bowl, add the greek yoghurt and sugar. Mix using a whisk until the sugar dissolves and the greek yoghurt becomes creamy.
- Next, mix in the cardamom powder, rosewater and soaked saffron strands & milk.
- Let the shrikhand sit in the fridge for around 15 minutes to cool.
- Garnish the shrikhand with a few chopped pistachios and saffron strands and serve!
