Chocolate, peanut butter, banana & date bites
This recipe is for a delicious evening treat which is based on a snicker bar. Banana slices are topped with a date & coconut puree, peanut butter and chocolate and then placed in the freezer. Make lots in advance and you'll always have a tasty sweet ready to eat. This recipe is inspired from simplyquinoa. I enjoy reading her recipes! Alongside the base recipe, I added some coconut to the date mixture to add another flavour which also worked really well.
Ingredients
2 large ripe bananas, peeled and chopped into slices
200g dark chocolate
15 dates (medjool dates are best!), soaked in boiling water for 30 minutes
1 tbsp desiccated coconut
100ml peanut butter (try to use an all-natural variety without added sugar or salt)
Handful chopped roasted peanuts to garnish
Method
- Take a baking tray or metal sheet (one that will fit in your freezer), and place a sheet of baking paper on top. It will make them easier to remove when frozen.
- Place the banana slices on the baking sheet and set aside.
- Whizz the dates and desiccated coconut in a blender until smooth, adding a little water if needed. You don't want to add too much water, otherwise it ill be too runny and it will slide of the banana slices
- Take 1 tsp of peanut butter and place on top of a banana slice. Repeat with the remaining slices.
- Next, take a small tsp of date mixture and place on top of each banana-date slice.
- Freeze for around 1 hour before dipping.
- Once you are ready to dip, melt the chocolate in a bowl over some boiling water.
- Once melted, dip each banana bite in the melted chocolate and put back on the baking paper.
- Garnish with the chopped peanuts and then freeze for a minimum of 2 hours before enjoying with a cup of tea!
