Gajar ka laddu | carrot ladoos
Another day, another ladoo recipe! Indian sweets make me very happy. I have a few more on my list which I would like to try, like mysore pak and jalebi. But these ladoos are made with carrots, milk powder and semolina. I had some leftover sugar syrup from some tinned gulab jamuns we had the other day, and I decided to make some ladoos out of it - no waste at all! These ladoos would be great to serve at a special occasion and can be flavoured with nuts like pistachios and almonds as well if you like. This recipe around 20-25 ladoos.
Ingredients
500ml leftover sugar syrup
If you don't have leftover sugar syrup - for step 1 of the recipe just melt 500g caster sugar in 500ml water and letting this come to the boil!
3 juicy carrots, finely grated
175g semolina
200g milk powder
1 tsp cardamom
1 tbsp butter
Method
- Heat the sugar syrup in a saucepan and let it come to the boil.
- In the meantime, melt the butter in a large non-stick frying pan. Add the semolina and roast until fragrant.
- Add around grated carrots and and cardamom. Cook on a low heat for around 10 minutes until softened.
- Add the milk powder and mix well.
- Working quickly, add the hot sugar syrup, whisking all the time to ensure no lumps form.
- Once you've added all the syrup keep mixing to remove any remaining lumps.
- Keep stirring until the mixture thickens and comes away from the side of the pan. Let cool and shape into balls!
