Cucumber, avocado & mint gazpacho
Summer is the time for nice chilled soups to cool you down! This chilled cucumber, avocado and mint soup is perfect for the warm weather! Avocados make the soup deliciously creamy and ensures a good supply of healthy fats. Avoids the need to add cream! Easy to make as you just need a blender.
Ingredients
2 medium cucumbers, roughly chopped
1 yellow pepper, roughly chopped
1 large avocado, roughly chopped
splash milk and water to make it your desired consistency
1/2 red onion, sliced
handful mint leaves
small piece of ginger
salt & pepper to taste
Method
- Whizz all the ingredients adding the milk and water to reach your desired consistency.
- Run through a fine sieve to remove any seeds or cucumber skins.
- Chill for at least 2hrs before serving and enjoy!
