Beetroot hummus
Other way to use up some beetroots! A refreshing dip to have with veggies or just on a nice piece of toast. Hummus is so easy to make, the only equipment you need is a blender. With a basic recipe of chickpeas, olive oil, salt & pepper and tahini you can make any kind of hummus you like! Roasted peppers is also a good option!
Ingredients
250g cooked beetroot
400g chickpeas, drained and rinsed (optional: rub through your hands to remove the outer skins, it will make the hummus smoother)
2 garlic cloves
Handful coriander (stalks and leaves)
1 tsp ground cumin
1 tsp tahini
2 tbsp lemon juice
2-3 tbsp extra virgin olive oil
Salt and pepper to taste
Method
- Tip all of the ingredients into a food processor and whizz until smooth.
- Check the seasoning and consistency, and if necessary add more oil, salt & pepper.
- Blitz again and serve with carrot sticks or on toast!
