Banana pancakes

My recipe for banana pancakes is a tasty option for brunch or breakfast during the weekend! Adding bananas to pancakes ensures that they are longer lasting in energy and you don't need to add any additional sugar or syrup. This recipe makes 6 pancakes, but you can easily scale the quantities up or down if necessary.




Ingredients
Makes 6 pancakes
1 very ripe banana mashed 
1/2 tsp baking powder 
1 1/4 cups / 175g self-raising flour 
1/2 cup / 125ml milk you can use vegan or normal milk
1 egg beaten 
1 tsp vanilla extract
Pinch salt 
Butter for cooking the pancakes

Method
Prep time - 10 minutes, cook time - 15 minutes
  • In large mixing bowl, add the mashed banana, vanilla extract and beaten egg and mix well with a whisk.

  • Next, slowly add the milk, mixing well. If you prefer it to be completely smooth and without any banana lumps you can use a stick-blender.

  • Next whisk in the dry ingredients (flour, salt and baking powder) and create a smooth batter without any lumps of flour. The mixture will be relatively thick. If it is difficult to mix, add a splash more milk. 

  • Take a frying pan and put to medium heat. Add a small knob of butter and let it melt.

  • Add around 2 tbsp of the batter to the pan and cook for 2-3 minutes, or until small bubbles start appearing on the surface. Flip, and cook on the other side for a further 2 minutes.

  • Repeat with the remaining batter.

  • Serve with berries, syrup, nut butters or toppings of your choice.
