Egg bhurji
Egg bhurji - the Indian version of scrambled eggs! Popular as a takeaway or street food. It’s made with with tomatoes, onion and fragrant spices. Serve these delicious eggs with rotis or bread. Super easy and simple. This recipe serves 2 people. Depending on how many people you are making this for, scale the proportions accordingly.
Ingredients
4 eggs
1 onion, finely diced
1 tomato, finely diced
Salt to taste
Pepper
Vegetable oil
You'll need these spices
1 tsp kashmiri chilli powder
1 tsp turmeric
1 tsp cumin seeds
1 tsp cumin seeds
Method
- Put some oil in a pan and add the finely diced onions and cumin seeds. Wait until the onions are slightly brown and add the tomatoes.
- Add the spices after the tomatoes have gone slightly mushy.
- Crack in the eggs and keep it on a medium heat, whilst stirring continuously at regular intervals so they scramble.
- You can stop when there is no more egg sticking to the pan.
- Add salt and pepper to taste and enjoy with rotis!
You also add in some crushed ginger, garlic and green chillies at the stage of frying the onions if you like.
