Pav bhaji masala

Coming to you with another masala recipe, one of my favourite things about Indian cooking! This is for pav bhaji, a classic street food from Mumbai. This recipe makes around 75-100g. As its so strong, this is plenty to last a while. Find the pav bhaji recipe here


Ingredients
1 tbsp cumin seeds
5-7 cloves
1/2 tbsp fennel seeds
1 tbsp coriander seeds
1 cinnamon stick
2 dried red chillies
5-7 cardamom pods
Few peppercorns (optional)



Method
  • Dry roast all the spices apart on a medium heat for around 3-5 minutes. Once roasted, remove from the heat and let cool completely.

  • Grind all the spices in a pestle and mortar or whizz in a spice grinder until finely ground.

  • Store in an airtight container or jar.
